The stories of six famous women, as told through their diets – Chicago Reader

Jean Anthelme Brillat-Savarin's aphorism "Tell me what you eat and I shall tell you what you are" is one of the most overused cliches in food culture, appearing everywhere from the opening sequence of Iron Chef to T-shirts and coffee mugs. But to the culinary historian Laura Shapiro, learning what someone ate is just the beginning of unlocking his or her identity.

"Tell me what you eat," Shapiro imagines herself asking her subjects, "and then tell me whether you like to eat alone, and if you really taste the flavors of food or ignore them, or forget all about them a minute later. . . . Please, keep talking . . . and pretty soon, unlike Brillat-Savarin, I won't have to tell you what you are. You'll be telling me."

In short, you can't tell a life story without telling a food story, though it's astonishingto Shapiro, anywayhow many biographers try. Food provides a new way to consider people's lives, not just their activities, but also their needs and how they care for others. This is especially true of women, who have, historically, been called upon to feed others. Shapiro's three earlier books, Perfection Salad, Something From the Oven, and Julia Child: A Life, all considered the lives and work of women who changed the way Americans ate during the 20th century. Her latest, What She Ate: Six Remarkable Women and the Food That Tells Their Stories, is an experiment in straight-up biography: the food stories of six famous women, only one of whom cooked professionally. Some never cooked at allor ate, for that matter. But not eating is part of a food story too.

Her subjects are Eleanor Roosevelt, Eva Braun, diarist Dorothy Wordsworth, Cosmopolitan editor Helen Gurley Brown, novelist Barbara Pym, and Rosa Lewis, the Cockney scullery maid who became one of the most celebrated caterers and hoteliers of Edwardian London. Each woman left a lengthy paper trail, which Shapiro followed faithfully to the very end, through archives and libraries on two continents. The amount of research that must have gone into this book is staggering: Wordworth's barely legible early 19th-century diaries through Gurley Brown's chatty, heavily italicized editor's letters, with detours through endless menus, memoirs, correspondence, cookbooks, newspaper clippings, histories, and much, much more. Though each chapter is fewer than 50 pages, these aren't biographical sketches: they are complete portraits.

Naturally, after spending so much time with people, even people who are dead, you tend to feel close to them (as Shapiro, a former alt-weekly journalist, points out, dead people never hang up on you). You want to refer to them informally, by their first names, as Shapiro does. Some, it's obvious, were more congenial companions than others. Shapiro appears to feel the strongest kinship with Pym, who took notes at restaurants on what other people ate and filled her novels with meticulously described meals. "Tea plays so many symbolic roles," Shapiro writes, "that another writer would have had to create a whole slew of walk-on characters to say what Barbara says with a cup."

She also feels a deep appreciation for Wordsworth, who for years selflessly took care of her brother, William, and his family, during which she was determined to find joy and blessedness in every aspect of her life, even a disgusting black pudding. Dorothy discovered the upside of invalidism in late middle agenow everyone had to care for her for a change and, especially, cater to her incessant demands for food to satisfy her feelings of "faintness and hollowness" as she slid deeper into dementia.

This is far more understandable and less reprehensible than how Eva Braun, who became enamored of Hitler when she was just 17 (her first words to him, incidentally, were "Guten Appetit" as she served him Leberkse, a Bavarian sausage), spent the second half of her life willfully creating her own glamorous reality, in which Hitler didn't call her because he was a neglectful boyfriend, not because he was busy invading most of Europe and killing millions of people. "For Eva," Shapiro writes, "who was looking forward to starring in a movie about herself when the war was overHitler had promisedlife itself was tantamount to a glass of champagne."

Braun drank champagne because she was on a perpetual diet. So was Gurley Brown, who discovered dieting in the summer of 1959 at the ripe old age of 37. She was a successful ad copywriter, able to pay cash for a Mercedes-Benz 190 SL, but she was a failure as a woman because David Brown, whom she had targeted as the ideal husband, refused to set a wedding date. The Serenity Cocktail ("pineapple chunks, soybean oil, calcium lactate, vanilla, fresh milk, powdered milk, and brewer's yeast") did its magic, thoughthey finally made it to city hall that Septemberand after that, her greatest joy in eating came from the discipline of counting calories. Her favorite comfort food was sugar-free Jell-O prepared with one cup instead of four so, Shapiro writes, "the dense, rubbery results would deliver the strongest possible hint of chemical sweetening."

Shapiro is bewildered, but also amused, by Gurley Brown's refusal to reconcile her girlish self-image with the powerful editor and businesswoman she truly was. (Her chapter is, at certain points, laugh-out-loud funny.) Gloria Steinem once begged Helen "to say something strong and positive about herselfnot coy, not flirtatious, but something that reflected the serious, complicated person who was in there, under the wig and makeup." Helen tried, Shapiro reports, she really did, but the best she could do was "I'm skinny!"

The most poignant food story belongs to Roosevelt. At times it's also nearly as funny as Gurley Brown's. This is largely because of Henrietta Nesbitt, the inexperienced and, as it turned out, inept Hyde Park neighbor Roosevelt hired to be the White House housekeeper and who tortured FDR and various guests for a dozen years with overcooked meat and watery prune pudding. Other biographers, such as Blanche Wiesen Cook, have proposed that Roosevelt herself was indifferent to food and that Mrs. Nesbitt was her ongoing revenge against FDR, for both his 1918 affair that destroyed her entire sense of identity and, later, for forcing her to assume the role of First Lady. Shapiro sees it an entirely different way.

"Yes, asceticism was a strong aspect of her personality," she writes, "but what's striking about her culinary asceticism is that she practiced it chiefly in context of being wife to FDR. Inside the White House, she was apathetic about what was on her plate. Outside, we get glimpses of a very different Eleanor. . . . It was Eleanor, away from FDR and ensconced with the people she cherished, who discovered the delights of appetite." Those were the meals, Shapiro writes, that Eleanor associated with love. It's a devastating commentary on the Roosevelts' marriage. But it also shows the power of a food story. v

In January 2016, Kari Hammond stumbled upon her 15-year-old daughter, Alexa, crying. When Hammond asked Alexa what was wrong, she said she was worried about her mom because Hammond was so overweight at 5 foot 5 inches tall, she weighed 217 pounds. And, Alexa was also afraid shed grow up to be "fat."

It was kind of a come-to-Jesus moment for me, Hammond told TODAY.

But Hammond had been overweight since she hit puberty and wasnt quite sure how to lose it. She had tried loads of diets where shed lose weight and then gain that weight back and then some. She decided to ask her mom, who always exercised and ate healthy foods, what to do. Her mom, Randi Longmeier, gave Hammond four recommendations:

I tried a lot of different things than these four things [in the past], Hammond said.

But this time she followed her mom's advice and started by cutting sugar. After eating no sugar for two weeks, she downloaded an app, Lose it! to track all of her calories and her exercise. Next she started tabata workouts, high-intensity training with a 10-second break between each 20-second interval of exercise. At first, she could only work out for 10 minutes before she felt exhausted. But she kept trying and built up her stamina.

In a few weeks, the weight started coming off quickly. But then it leveled off.

It was a really steady loss for me, she said.

When Kari Hammond's daughter, Alexa, told her mom she was worried about her health because Hammond was so overweight, Hammond decided to get healthier.

As she continued losing, she altered her goals to match what she was doing. Originally, she thought shed like to be at a health body mass index, which was 150 pounds. After reaching that, she adjusted and lost more weight and now weighs 135 pounds.

In total, she lost 78 pounds. Being flexible helped her be successful. She also added some muscle by doing tabata-style exercises for 40 minutes and walking for an hour each day.

I used to think I had no time for exercise. Forty minutes of exercise is four percent of my day, I can give myself four percent of my day, she said. That was life changing.

For the past nine months, she has been maintaining her loss. She still relies on the four suggestions that Longmeier gave her and learned she was stronger than she realized.

I can do really hard things, she said. Health is important and I want to live a long time.

In less than a year Kari Hammond dropped 78 pounds by following four tips her mother gave her.

Hammond provided tips to others hoping to lose weight.

When the number on the scale doesnt budge, it can feel overwhelming. Thats why Hammond looked at other wins during her weight-loss journey. She celebrated milestones, such as feeling more comfortable in a chair, having a noticeable collarbone or seeing one chin instead of two. This kept her from feeling frustrated.

Logging every single thing she ate and her exercise helped her lose steadily and keep the weight off.

I am super consistent. I have literally logged every single thing I have eaten for 450 days, she said. I am that dedicated to this process.

There are days when Hammond eats twice the calories she was supposed to eat. When that happened in the past as she tried losing weight, shed give up. Now, she takes a more realistic approach.

Since losing 78 pounds, Kari Hammond finds that she enjoys being active and has a harder time just sitting on the couch.

I made many mistakes, she said. I recognize it and move on from it.

Is all of the food you want me to eat calorie-free?Some people fool themselves into believing that when the label says diet food, it means virtually no calories. Remember, apart from plain water, there is no food that is calorie-free. Anyone who says otherwise is fooling you.

If I have a night of binge-drinking planned, can I detox the next day and lose weight?Our bodies are naturally equipped with detoxification processes that are working 24/7, which is why we perspire and pass out all the waste from the body. When you drink alcohol, you may eat lighter food the next day to feel less clogged up, but this is not going to help lose the calories that are now stored in your system. Im going for an all-you-can-eat buffet dinner; is it okay if I go to the gym for two more days this week to burn the calories?If only things were so simple. Exercising a little extra the week that you eat morewill not help rid you of those calories. Whats more, if you are not consistent with your workout,your metabolism is not going to rise either. Exercise is not something you can store in your body but calories are easily stored, so dont switch one for the other.

How long do I have to follow the diet? I can eat everything after I lose weight, right?Going on a diet to lose weight should mean a lifestyle change, and this change should be permanent. If you are a person who keeps going on and off diets, you will constantly find yourself losing and gaining weight constantly. It is not a great idea to only look at the calorie value of food, instead start looking at food from the point of view of nourishment and what makes you fitter, and you will find making healthy choices far easier.

It was diet food so I ate a few extra helpings. Why does the scale not show any weight loss?The diet food tag itself somehow makes people fail at their diets. Dont fall for gimmicks that promise no-sugar, low-fat, fat-free or sugar-free labels. Usually, one ingredient is simple replaced with another and the calorie values are altered only very slightly. If you end up eating too many portions of this food you will end up making up for those calories anyway.

I ate a large meal, but I swear I had a diet soda with it. Is that okay?This is the weirdest logic. You are reducing the calories you get from sugar, but what about all the extra fat that you have consumed in your big meal? Topping it with the artificially-flavoured drink may ease your guilt temporarily, but it wont do anything for your waistline for sure.

The bottomline is to eat healthy because it is good for you, not because your dietician wants you to. And whatever plan you get on, make sure its one you can keep up with, even when your excess weight has dropped.

Seattle Children's hospital opened one of the first clinics for transgender kids in the state nearly a year ago, and now hundreds of patients from multiple states are seeking its services.

For many kids like Michael Hefferan, the Gender Clinic has opened the door to a new life.

"It was about ninth grade that I came out to everyone at school with my family," Hefferan said.

The 17-year-old remembers hearing about a doctor at Children's who treats trans teenagers and demanded to see him.

"I was pretty much like, 'We need to schedule this as soon as we can. I don't care if it's on my birthday. We need to go in and we need to meet him,'" he said laughing.

Now more than 10 appointments in, Hefferan is here on a Tuesday for a routine checkup.

A nurse takes his vitals, checks his height, weight, and his blood pressure. As part of his transition, the Bothell High School student has been on hormone replacement therapy.

"My voice has gotten a lot deeper," Hefferan said. "I've grown some facial hair. I guess I feel more masculine in my body. I don't know how or why, but I do."

He keeps his medication in a plastic box. A syringe, a notebook where he keeps track of all his injections, his small bottles of testosterone, and band-aids. He administers the shots to himself once every two weeks.

"I just do it right in my stomach, an inch away from the belly button," he said.

This doctor's visit will help determine how the hormone therapy is working.

The appointment is mostly an open dialogue between doctor and patient. Dr. DavidBreland, who heads up the Gender Clinic at Seattle Children's, asks Hefferan how he's feeling, checking in on Hefferan's physical and emotional health.

"Are you dating anyone?" Breland asked.

"No," the teen answered.

The doctor also checks on the impact of the testosterone. Hefferan said he's been noticing facial hair. Breland notes his patient doesn't seem to have any acne.

Hefferan's mom has witnessed dramatic changes in his mood.

"He is so much happier," said Rayna Hefferan. "He's not as mad or as angry at times as he used to be."

Happiness is the goal, according to the clinic's director, and to have the outcome of the particular hormone.

"For testosterone, a lot of my patients want a deeper voice, they want some hair, they want more muscle mass, etc.," said Breland. "And a lot of my patients want to be as 'stealth' as possible. They want to be in the community and perceived as that gender."

"My chest is one of the things that make me most uncomfortable with my body," said Hefferan.

He now binds his chest, a technique used to minimize the appearance of a person's breasts.

"Top surgery is something I've always really wanted from the beginning," said Hefferan. "Just because I bind every day and it's not always the most comfortable."

Seattle Children's does not offer surgeries but provides referrals. For Hefferan, the procedure is on the horizon.

For now,Breland tells him to stay on the same dosage of testosterone, as they wait for his blood test results.

Hefferan is thankful to have a clinic who treats his true self.

"It's really important for the younger kids who come here to have that affirmation that you're okay," he said. "That there is nothing wrong with you for not feeling comfortable with the gender you were assigned when you were born."

Each patient goes through a mental health readiness assessment before starting treatment.

The Gender Clinic now has 250 active patients and hundreds more inquiring about treatment.

Stay away from fizzy drinks

Sugary soft drinks wont make you feel great and may not even quench your thirst. They can really be a major cause of weight gain. Go for sugar-free every time or even better, move to fizzy water instead.

Count to 10

The average craving lasts about 10 minutes. So before you cave, do something else for 10 minutes and see if your craving passes. Start a rotten job youve been avoiding declutter your mail pile, tackle your ironing mountain. When you complete that, its a great achievement and that will cheer you up too.

Go brown

Chose wholegrain pasta, rice and bread when you can. It will fill you and can really help you lose weight more quickly than the white varieties.

Write yourself notes

To help you stay on track, post notes to yourself on the fridge and the pantry. Put up a little stop sign or make tags with questions like: Do you want this food enough to wear it? and: Are the calories worth the consequences?

Try smart swaps

Look for nutritious alternatives to sugary treats. Frozen grapes instead of sweets. Choose popcorn instead of crisps.

Give yourself a break

Nobody is perfect, so expect to make mistakes along the way. If you overeat one night, just get back on track in the morning by focusing on whats worked for you in the past.

Get support

Our motivation lasts about three weeks then we need to get someone on side to help us along the way. Get someone to do it with you or join a slimming group. Youll do better than trying alone.

Put your make up on and get dressed up even if you are not going anywhere. If you are going out somewhere special and you do your hair and make-up and put on a lovely outfit, how do you feel? Yes, you feel fantastic, so why not do that every day?

Be Active

Each week, add five minutes of activity to your daily routine until you work up to the recommended 30 minutes per day. Your health deserves half an hour a day.

Add some salsa

If you dont like traditional veg, chop up some tomatoes, onions and a little fruit, like pineapple, to add to your meals and snacks.

Ease up on the alcohol

Remember that alcohol has hidden calories. The worst offenders are creamy cocktails, which are the same as drinking a rich dessert. If youre trying to lose weight, choose something else.

Add an egg

A little protein prolongs the feeling of fullness better than carbohydrates or fats do.

Portion distortion

Pull out the measuring spoons and cups, because its easy to misjudge portion sizes. Half of your plate should be vegetables.

Research from Loma Linda University suggests the best way to lose weight comes down to the frequency and timing of meals.

Dr Hana Kehleova, one of the studys authors, said the bottom line is to make breakfast the biggest meal of the day, have a medium lunch and then a small dinner.

Data from more than 50,000 adults was collected by researchers at the university to form the study.

Nutritionists then analysed the adults eating habits and weight over a seven-year period.

The results revealed four factors help decrease BMI - eating one or two meals per day, fasting for 18 hours, eating breakfast and making breakfast or lunch the largest meal of the day.

The findings were released in the Journal of Nutrition.

The study authors wrote: Our results suggest that in relatively healthy adults, eating less frequently, no snacking, consuming breakfast, and eating the largest meal in the morning may be effective methods for preventing long-term weight gain.

Other experts have stressed the importance of eating breakfast.

Milton Stokes, R.S., author of Flat Belly Diet! For Men, recently revealed eating breakfast is essential for weight loss.

Explaining why, he told Mens Fitness: Its like putting logs on a woof-burning stove. You need that initial input of fuel to get your metabolism going for the day.

The aim should be to intake around 400-600 calories within an hour of waking up.

Milton advised focusing on protein, healthy fats and fibre, as these will leave dieters feeling fuller for longer.

Jorge Cruise, author of The Belly Fat Cure, advises people eat eggs with avocado in the morning.

He said: Avocados are natures ideal fruit for weight loss. They replace sugar with appetite-curbing good fat.

David Grotto, R.D., author of 101 Foods That Could Save Your Life, says a shake with whey protein is the way forward.

He said: Whey is rich in branches chain amino acids, which stimulate muscle growth. The more muscle you have, the greater the fat-burning capacity of your metabolism.

One of the biggest decisions of your life could be making you fat, new research reveals.

Settling down or tying the knot can come with many benefits, but it could also make you gain weight.

This finding comes from a new study by the University of Baths School of Management.

The researchers used over a decade of data from 9,000 men in the United States and found married men had a significantly higher body mass index than single men.

The most significant weight gain occurred after these married men became fathers for the first time.

However, the researchers found men who divorced in those ten years had a significant drop in their BMI following the divorce.

Study author, Jordan Syndra believes the reason you gain weight in a relationship is because you might start to eat meals more regularly, or find yourself in more social situations with food.

Jordan added that people who are single might want to stay that way in order to stay fit.

She said: It's useful for individuals to understand which social factors may influence weight gain, especially common ones such as marriage and parenthood, so that they can make informed decisions about their health and well-being.

The researcher continued to say that men who want to be mindful of their BMI should practice a healthy lifestyle.

For married men who want to avoid BMI increases that will mean being mindful of their own changing motivation, behaviour and eating habits.

Given major public health concerns about obesity, understanding more about the social science factors that can cause weight fluctuation is important.
