This week on The Zest Podcast, meet the woman behind the men. Tracie Hartman is the executive performance chef for the Tampa Bay Buccaneers, meaning she feeds all 53 players, plus the coaches and support staff breakfast, lunch and sometimes dinner every day during football season.

Meals are served at the dining room of the Bucs practice facility, the AdventHealth Training Center, in Tampa.

Our shopping list looks like everybody elses, but in huge, massive quantities, Tracie says with a laugh. We eat a ton of salmon and a ton of chicken.

To create new menus every week, Tracie works with a sous chef and nutritionist. Whats on the menu depends on the day of the week.

For instance, during midweek practice, Tracie offers lots of salmon, chicken and leafy greens. Toward the end of the week, Tracie adds in more simple carbs, like potatoes, burgers, pasta and chicken tenders albeit not fried. On the eve of each game, the team indulges in ice cream sundaes because its quick carbs, Tracie says. So its not all healthy 24/7/365. For postgame recovery and calorie replenishment, Monday is the perfect time for biscuits and gravy.

Everybody eats some of the meals, Tracie says. You have to think with 53 players, everybody doesnt love everything all of the time, and thats OK.

In general, the players consume anywhere from 3,000 to 7,000 calories daily, depending on their position and goal weight. Tracie says offensive and defensive linemen need the most calories.

Since coming to the Bucs in April 2021, Tracie has emphasized vegetables. Sometimes shell even sneak them into food, like zucchini tots.

Since Ive come here, the Tampa Bay Buccaneers are learning how to eat a lot of veggies, she says.

But knowing that players will grow tired of her cooking and be tempted to eat off-campus as the months drag on, Tracie keeps a few tricks up her sleeve for later in the season. Popular meals include birria tacos, make-your-own acai bowl and avocado toast with smoked salmon and pork belly. On the day of off-season visits in July, lunch was a build-your-own grilled cheese bar.

To keep things interesting, Tracie and her team create a new menu every week. She estimates that shes written 2,000 recipes since she started. She even takes suggestions from players. Center Ryan Jensen bought her a grill, which Tracie occasionally uses to make ribs or brisket. Theres also a daily clean menu of grilled chicken, brown rice, broccoli and salads for picky eaters.

We cook every day, unless theyre out of town, Tracie says. She hasnt been traveling with the team due to COVID. But when the guys are on the road, she sends recipes to their hotel.

On this episode of The Zest, Tracie discusses how she went from working in finance to feeding the Bucs, which players love junk food and whether Tom Bradys diet is as strict as everyone thinks.

Is the Keto diet safe for diabetics? Is it only good for short-term weight loss? Does it increase cholesterol? – The Indian Express

I recently saw a 23-year-old obese (weight 92 kg, BMI 33 kg/m2) girl. She was smiling but looked unsettled. She told me, Doc, I have been on a Keto diet for the last two months and have lost 4 kg of weight. Yet I feel feverish, fatigued, dizzy, have plenty of cramps, insomnia, my breath smells so bad. And I have trouble eating all that high fat-oil laced diet daily. So, she did lose weight but suffered from some long-lasting side effects in the bargain.

What is a ketogenic diet?

The story of Keto diets started with Atkins diets, which rapidly gained popularity. Dr Atkins New Diet Revolution: The High Calorie Way to Stay Thin Forever has sold 12 million copies and remains a bestseller till this day. Predominantly non-vegetarian Western populations loved this diet (Breakfast: Greasy ham, bacon and eggs; lunch, steak with plenty of cheese; and dinner, fish, crab, and chicken cooked in a whole lot of butter). This diet leads to rapid weight loss in many individuals. Low carbs (less than 30 gm per day, equivalent to about one-and-a-half rotis) lead the body to find alternate routes to energy generation from acidic ketone bodies (hence the name ketogenic diet). These ketone bodies provide energy in an efficient manner and suppress appetite. Since then, several similar diets have emerged due to two reasons. First, to consistently consume very low carb, high fat and protein daily is difficult, hence the quantity of carbs per day has been increased in the modified diets. Second, it is not possible for vegetarians to eat a diet designed by Atkins, hence, ghee, coconut oil etc have been added in surplus.

What are pluses and minuses?

There are several plus points for this diet. Rapid weight loss can be achieved, sometimes more than that seen in usual calorie restrictive diets. In patients with diabetes, blood sugar levels and sensitivity to insulin improve and the need for anti-diabetic medications decreases. The diet may help patients with polycystic ovaries as well by improving their metabolic environment. Interestingly, robust evidence indicates that these diets have been known to decrease seizures in children resistant to high dose medications. Further, there is persuasive evidence for effects of these diets on acne. Although tried, there are no clear benefits in cancers, Parkinsons disease and Alzheimers disease.

But many scientists are not ready to accept this diet because of uncertainty regarding benefits and harms. There are several known adverse effects and some not known or proven. While short term weight loss is slightly superior to conventional weight loss diets, long-term results are not yet known. In animals, this diet is known to increase density of fat in the liver (worsen fatty liver), which remains a concern in humans, short of good data. Recent reports show an increase in bad LDL cholesterol with these diets, which could adversely impact heart health. Finally, no good studies are available concerning Indians, who have bad liver (plenty of fatty livers) and LDL cholesterol (blood is full of fats, which could lead to dense deposition in the arteries that may cause blockages).

Who should not follow ketogenic diets?

First, these diets are a no-no for patients with heart failure and heart rhythm irregularities. Second, avoid such diets in patients with disturbed functions of kidney and liver, and history of pancreatic inflammation (pancreatitis). For patients with diabetes, extra precautions are needed when using these diets. Those who have Type 1 diabetes or have pregnancy with diabetes should not try this out at all. Many diabetic patients, who are on SGLT2 Inhibitors (Empagliflozin, Dapagliflozin and Canagliflozin) should be careful since Keto diets and these drugs would have additive effects on ketogenesis, which could reach dangerous levels. Finally, those who are on blood thinner (Vit K-dependent anticoagulation) should avoid Keto diets.

Is it worth short-term gains?

It looks like Keto diets are not a panacea for weight loss, only somewhat better than conventional weight loss diets in the short-term. So low carbohydrate Ketogenic diets are a reasonable option for rapid weight loss among young obese individuals with no organ dysfunction. This should be tried for three to six months under supervision of nutritionists and physicians. Cholesterol and liver profile should be done to check for any extreme responses. Similarly, in obese young and recently detected patient with diabetes (not on SGLT2i), this diet is a reasonable option to check surge of sugars or even for reversal of diabetes. Finally, the effect of very low carb Ketogenic diets on longevity is unknown, and one study suggests these are not favourable.

Parents’ who reward kids with food, restrict their diet may turn them into ’emotional eaters’ – Study Finds

PHILADELPHIA Parents who reward children with food or restrict their diet risk their kids becoming emotional eaters who use food to regulate their feelings.

Researchers investigated how various feeding and eating practices used by parents, such as restriction, food as a reward, and child involvement can influence the eating behavior of their children. The data revealed that emotional eating among teens is more likely if their parents use food as a reward or monitor their diets.

It is even more likely with teens who use eating to regulate their emotions. Studies show that emotional eating, or eating as a coping mechanism for negative, positive, or stress-driven emotions, displays a connection with unhealthy dietary patterns and weight gain.

However, parents who involve their child in their meals have the opposite effect. Being involved helps with emotional regulation and therefore makes teens less likely to emotionally eat. A parents restrained eating behavior also displayed a link to less emotional eating in adolescents.

Emotional eating was previously found to be more learned than inherited. This study examined not only the interaction between parents when feeding their children, but also what children learned from watching their parents eat, says lead author Joanna Klosowska, MSc, from Ghent University in a media release.

The study found there was a large increase in emotional eating among teens during this time. The study, published in the Journal of Nutrition Education and Behavior, was conducted in 2017 with 218 families. The researchers also used data collected in 2013.

During that time, the children moved from late childhood to middle adolescence. One parent from each family completed questionnaires to gauge their eating and feeding habits. Both the parent and their child then answered questions on their eating behavior.

The researchers measured the teens emotion regulation and their weight and height. They used this information to reach their conclusion that a parents eating habits are hugely influential on their childrens relationship with food.

This study suggests that parents continue to play an important role in their childs eating behavior into their teen years, Klosowska concludes. Additional research is needed to understand the impact restrained eating demonstrated by a parent impacts the emotional eating of a child.

The kind of longevity Carr has experienced in football doesnt happen by accident. So fresh off a three-year $121 million dollar contract extension and with a new head coach and a healthy roster, the 31-year-old caught up with GQ to talk about the importance of active recovery, dealing with the desert heat, and the inspiration he got from Kobe Bryant.

GQ: Heading into your ninth NFL season, what does a typical day look like for you?

Derek Carr: Right now, Im usually up by 5 in the morning. I have a big breakfasta big shakeand then get in the hot tub and stretch to get my body ready for the day. Well have meetings to go over what we are going to do that day. The plays, the different situations. After that well go to practice and however long that is, it is usually longer. [laughs] Well usually have a workout after. Then its recoveryit's all recovery after that. Im in the pool trying to flush my legs, hips, back, all that kind of stuff. I'm getting treatment in the training room to make sure that anything that does feel right can feel the best it can for the next dayand then I go to meetings again. Then I come home and hang out with the kids. Have dinner, and then start studying for the next day. When the football season comes, its Groundhog Day. Its pretty much the same routine. Thats what has worked for me for so long.

What are you usually having for your meals?

The easiest way to say it would be that usually my plate is like a third, a third, a third. What I mean by that is a third protein, a third some kind of grain, and a third fruits and vegetables. Thats probably the easiest way to describe it. Breakfast and lunch I eat at the facility and then dinnerusually my wife cooks, or we have a chef that will bring us three dinners for our whole family to make sure were eating right and to give my wife a bit of a break so she can hang out with our four kids.

Whats your favorite meal your wife cooks?

Oh, there are so many good ones. She makes amazing pasta. She makes an amazing its really healthy but we call it a sloppy joe. Thats what the kids think at least. Shell make these chicken nuggetsI don't know if they're even breaded. But she takes potatoes and dices them up and puts them in the airfryer. Our kids think they are eating chicken nuggets and french fries but actually they are really healthy.

How has your approach to diet and fitness changed, if at all, since you first came into the league?

When I first got in the league I was 20-something years old. I could eat whatever I wanted and still have 8 percent body fat, but as you start to get older, thats not the case. Things start to hurt. You know, Im 31 now. This will be nine years in the NFL. Its like dog years and it takes a toll on your body. Ive just learned over the years that the more Ive cleaned up my diet, the better I felt.

Should you eat your biggest meal in the morning or in the evening?

Some researchers are saying it doesnt make a lot of difference as long as you consume the same number of calories throughout the day.

In a study published today in the journal Cell Metabolism, European researchers tested two types of weight-loss diets against each other.

Both diets included the same total number of calories each day.

But one diet had participants consume most of these calories in the morning, while the second had most of the calories in the evening.

The result? Both diets performed about the same in terms of weight loss.

The group who ate the larger morning meal, however, was significantly less hungry throughout the day.

In this study, 30 people, 16 men and 14 women, were recruited to participate, all of whom were either overweight or had obesity but were otherwise healthy.

No participants had diabetes, a condition that could significantly alter the results in a study of this size.

This was a real-world study, not restricted to a lab setting, with participants under observation for four weeks.

Each individual had a fixed daily calorie intake, but some had a larger morning meal while others had a larger evening meal.

How large is large? 45% of their daily calorie intake.

Lunches for both groups made up 35% of their calories while their smaller meal was 20%.

All participants got about 30% of their calories from proteins and 35% each from carbohydrates and fats.

At the end of the study, the weight-loss results for each group were comparable.

However, the group that had larger morning meals showed a decrease in ghrelin a hormone that makes you feel hungry during the day, while they also had an increase in hormones that make you feel full.

These participants also had slower gastric emptying, which means that their food spent more time in their stomachs before entering the rest of the digestive tract.

Researchers said this was an important finding because previous studies have suggested that front-loading your calories in the morning leads to enhanced weight loss.

Emily Feivor, RD, a registered dietitian at Long Island Jewish Forest Hills in Queens, part of Northwell Health in New York, told Healthline she wasnt surprised by these results.

The idea of keeping hunger in check with balanced meals at structured mealtimes may be a significant help in achieving appropriate portion sizes and intakes throughout the day, which is the most effective and simplest diet secret, Feivor said.

Lori Welstead, MS, RD, LDN, a registered dietitian and nutritionist at the Section of Gastroenterology, Hepatology, and Nutrition at UChicago Medicine, told Healthline, It is a challenge to study nutrition and metabolism in human subjects. We are not as simple as mouse models or as it may seem in the lab.

This was the first study of its kind and helps to build insight to provide the groundwork for more studies, Welstead added.

She noted that the researchers admittedly couldnt measure things such as glucose in the group that ate larger evening meals because the participants had to go to sleep.

Megan Wroe, MS, RD, CNE, CLEC, a wellness manager and registered dietitian for the Wellness Center at Providence St. Jude Medical Center in Fullerton, California, told Healthline she agreed that this study led to interesting questions for future research.

I would love to see the authors take this study further now and assess outcomes of breakfast meals with various macronutrient composition. A high fat vs. high protein vs. high carb breakfast may instigate very different outcomes, Wroe said.

Its one thing to study weight-loss diets. Its another to be on one.

While having a larger breakfast may make it easier to maintain a specific diet, its important to remember that in this study total daily calories were strictly controlled.

Experts say having a large breakfast without making any other lifestyle changes is unlikely to have a significant positive effect on your health.

Breakfast should include the basic building blocks: high fiber from fruits/vegetables or whole grains plus a good amount of protein and some heart-healthy fats, said Feivor.

Beware of breakfast traps of high sugar/low fiber cereals, fruit juices (even 100%), pastries, and highly processed meats, she warned.

Listen to your body. If you are hungry then eat. If you are full then stop. It takes about 20 minutes to really notice that signal, said Welstead.

Many diets for weight loss are not geared toward sustainable lifestyle changes and are quick fixes. If it seems too good to be true, it probably is, Welstead added.

The importance of physical activity cant be ignored either.

Improved heart rate, increased energy, and mood, reduced levels of stress, increased muscle tone, reduced visceral fat, and improved metabolic markers such as blood sugar and blood pressure are all common potential benefits of increased physical activity even if there is no weight loss associated with it, said Wroe.

Weight-loss diets almost never create sustained loss if there is no change in how the person eats. There is only so far calorie restriction can go, independent of when those calories are allotted into the day, she added.

The film also featured Dwayne The Rock Johnson, who motivated Efron during their workouts together on the set.

Besides being an actor, Efron is also a fitness enthusiast and likes to work out. He even shared his fitness journey for a brief period on his YouTube channel called Gym Time, featuring training sessions with different celebrities. Last year, Efron showed off his ripped abs on social media. He looked incredibly lean.

In a recent video uploaded on Mens Health YouTube account, Efron shared the various kinds of diets he tried in preparation for his roles and revealed that he is currently on an intermittent fasting diet plan.

I guess the philosophy around my current diet is intermittent fasting mixed with getting enough nutrition to sort of sustain me throughout the day. I started intermittent fasting just after I stopped being vegan. My body wasnt processing the vegetables the right way so I decided to stop it and start something new. Intermittent fasting has been really helpful with that.

He had a strict schedule for his most-ripped role in Baywatch.

I adopted a really specific eating regimen. Clean fish or meat with sweet potatoes, like that. I just did that for the entire film. So that was the most extreme I had ever gone. I think I was in ketosis the entire film.

Beer run was really fun. I just got to eat whatever I wanted.

I feel good when I have bananas and sweet potatoes. I think I get the most bang for my buck out of those ones. Also plantains for some reason give me good energy for some reason.

This is kinda of a weird one but I really like organ meats so I love liver and onions, things like that. So typically Ill break fast around 10:30 or 11, but thats after I do some cardio. First meal of the day usually starts with bone broth. I really love bone broth, its satisfying, its good for your stomach.

Some sort of veggies with a really clean source of protein whether its chicken, beef, venison, elk anything. Then I usually have my highest carbohydrate meal sort of in the evening. Thats usually another really good source of meat and healthy carbs like sweet potatoes or quinoa.

Efron made it clear that his roles require a lot of discipline and dedication to keep his fitness levels high. With his current plan of intermittent fasting, Zac intends to eat healthier while still maintaining an impressive frame.
